Winter Squash Waltham Butternut
Now quite a common vegetable to find in the supermarket. Butternut Squash has an elongated pear shape which is light orange-golden with deeper orange flesh. This variety matures in late autumn for winter storage. Butternut squash is stunning when baked, roasted or made into a soup with its sweet yet savoury flavour.
Sow from April to May under glass, or mid May to June outside. Sow seed on its edge, 1.5cm deep, to prevent rotting in pots or trays during April and May. Keep under glass at 20°C using good quality seed sowing compost. Sow outdoors mid-May to June direct into growing site, 1.5cm deep with 2 to 3 seeds in each position. Greenhouse sowings should be gradually hardened off once they have developed the first pair of rough leaves and transplanted to growing site in late-May to early-June, 60cm apart once all risk of frost has past. Outdoor sowings should be thinned to one plant per station. Ready to harvest from September to October.
